What is the difference between Fingerstyle Guitarist, Solo Guitarist and Jazz Guitarist?

The first term refers to the technique, the 2nd to the format, while the latter refers to the genre. 

FINGERSTYLE is a technique the guitarist use to play the guitar. It simply means to use fingers rather than plectrum or pick (the triangle chip you see guitarist's holding). 

This technique enables the guitarist to control which particular string he/she wants to sound at some particular moment, hence he/she can play the melody, chords and the bass line (sometimes some percussive tones) simultaneously with poly independent rhythm in every part. 

This technique could enable the guitarist to play SOLO (chords, melody, bass line), though it's not necessarily this term refers to solo guitar playing. Technically, just some arpeggio playing or some melody playing using fingers are considered fingerstyle.

JAZZ is a genre associated with freedom and improvisation. It has an interesting advanced music theory for the scales, harmony and rhythm as its core.

A fingerstyle guitarist is not necessarily a jazz guitarist and vice versa. There are many fingerstyle guitarists don't play jazz and on the other hand, a lot of jazz guitarists use plectrum rather than fingers to sound. 

In term of format, some guitarists are more fluent in holding his/her part in team while some are in in solo situation. Every guitarist has his/her own unique approach and great in his/her own right. George Benson plays amazing spontaneous single lines while Tuck Andres plays amazing rhythm section by his own unique way.

There are also some guitarists who are really adept in both situation, such as : Martin Taylor, Tommy Emmanuel, Luis Salinas, Joe Pass, Charlie Byrd, Lenny Breau, Stanley Jordan (with his unique touchstyle), etc.

My own experience....

I personally love to hear the rich harmony of jazz and it's beautiful licks, and also off course it's cool groove. I enjoy playing with team as I enjoy the synergy of bantering ideas, throwing question & answer kind of lines. It has many surprising elements in the organic interaction with band members. It's so fun to have some playful musical dialogue with them.

I also love to arrange my playing as solo guitar too. I enjoy the challenge to replicate how band works into a simpler fascinating form, in this case in 1 guitar. In this case I enjoy the freedom in reharmonizing or re-grooving the piece I'm playing, as well as soloing over the chord progression. Optimizing the goal within all feasible constraints makes me feel thrilled.
